Beer is an alcoholic beverage which is consumed by all over the world. This is a most popular drink after water, tea and coffee. It is produced by the brewing and fermentation of starches, which is mainly comes from cereal grains malted barley, wheat, maize (corn), and rice. Beer is flavored with hops, which enhance bitterness and also acts as a natural preservative. Main ingredient of making beer includes four major things i.e. barley, hops, water and yeast. If the process is considered in detail beer brewing has different stages like malting, milling & mashing, brewing- cooling and fermentation which is followed by aging, filtering and bottling.
To begin with, the first step of beer making is called malting. In this process barley is prepared to be germinated for 1-2 days. As the process of malting progress it exposes the starches present in the barley. Then germinated barley is spreads on the flat surface in the sprouting room for 3-5 days. The germination process produces the enzymes by breaking down. This barley grain is knows as green malt. Germination is stopped by drying the green malt on metal shelves. Malted barley is the main ingredient. At the end of kilning, the product obtained malt. The flavor, color and aroma of the beer would be different as there are variations in the ways of malting the barley.
Next process is milling and mashing i.e. cracking of the grain which the brewer chooses for the particular beer. Milling the grain allows it to absorb the water which are mixed in order to let water to extract sugars from the malt. Then a sweet syrupy fluid is extracted from the finest ground malt. It transforms the starches into sugars that can be fermented. The milled grains are released into warm water then are slowly heated in a mash tun. The grain and heated water forms a cereal mash which dissolves the starch into the water and convert it into sugar. Water is a key part of the brewing process. This water which contains sugar is then strained through the bottom of the mash which is called ‘wert’.
Brewing is one of the most an important process in beer making. The finished grains are drained out and wert ready for boiling. During this stage, hops are added at different times throughout the boil process for either bitterness or aroma and also for preserve it. The wert is boiled for 1 or 2 hours to sterilize and concentrate it and extract the necessary essence from the hops. The wert is shifted quickly from the brew kettle to filter out the hops for cooled. Fermentation is a vital step in brewing. The yeast is added into the fermentation tank. The yeast turns the sugar into alcohol and carbon dioxide.
This process takes ten days approximately. The wert finally becomes beer and it is left for the aging for few weeks to a few months to complete so the flavor comes out. Here the beer is filtered and carbonated. The beer is transformed to a holding tank where it kept till it is bottled or canned.
Overall, the brewing of beer contains different stages. Each stage has a unique process to extract the real taste of beer. The combination of ingredients and the exact time of adding it make the solution’s taste as per the brewer’s choice. From malting to fermentation, each stage has its integral role to make the beer perfectly, which ends with the delicious beer.
